Chef: Sébastien Dagoneau
Born in Poissy, Sébastien grew up in the hills of the Perche, a historic region renowned for the quality of its produce.
His love for food and cooking came from both his epicurean parents and spending time at his grandparents’ farm.
Having decided to turn his passion into his profession, he attended the Lycée hotelier de Blois, where he received the knowledge and training to guide him into the professional world.
From Blois he moved to Paris, where he was trained by some of the great names in Parisian gastronomy (Lucas Carton, Ritz, Le Grand Véfour) and acquired the experience and personality that now shape his cuisine.
Sébastien and his team are dedicated to showcasing French seasonal produce, cultivated with a respect for the environment and are always looking for a creative approach in delivering exquisite experiences for the taste buds.
